Sautéed Brussels Sprouts

This is a quick and easy way to cook this often-avoided vegetable, and I have made many a Brussels sprout convert through this recipe. Steaming the sprouts in chicken broth helps to draw out their true hearty flavor and makes them a great accompaniment to any chicken or fish entree.

Shopping List

  • Brussels sprouts (preferably still on the stalk, but bagged sprouts will do)
  • Olive oil, for sauteing
  • Kosher salt
  • 1 cup chicken broth

Recipe

Place a large skillet over medium heat.

Prepare the brussels sprouts by rinsing them in water, drying them and cutting them in half length-wise.

Add enough olive oil to the heated pan to thinly coat the surface.

Place each brussels sprout cut-side down in the pan and allow them to sautée for 3 to 4 minutes, or until they are slightly browned.

Sprinkle a pinch of Kosher salt over the sprouts as they sautée in the olive oil.

Pour the chicken broth over the sprouts and immediately cover the pan with a lid.

Allow the sprouts to steam for 6 to 8 minutes, or until they are soft through the browned center.

Serve as a side dish, or enjoy a bowl of the sprouts as a healthy snack!
