Alison’s Baked Sweet Potatoes

My sister Alison is more of a fashionista than a cook, but when she does decide to join me in the kitchen, you can guarantee she’ll be cooking up something delicious. Her baked sweet potatoes are a family favorite because they’re full of flavor and incredibly tender. Alison says you can add red pepper flakes to give this simple side dish an extra kick. Tonight we enjoyed her famous sweet potatoes with Noni’s Baby Back Ribs.

Shopping List

  • 4 sweet potatoes, peeled and cut into ½-inch cubes
  • 4 cloves garlic, minced
  • 1 Tablespoon dried thyme
  • 5 Tablespoons olive oil
  • ½ teaspoon Kosher salt

Recipe

Makes four servings.

Preheat oven to 400º.

In a large bowl, combine the cubed sweet potatoes, garlic, dried thyme, olive oil and kosher salt. Mix thoroughly.

Line a baking sheets with parchment paper.

Spread the coated sweet potatoes onto the baking sheet so that they are not touching each other.

Bake the potatoes at 400º until the tops are golden brown (about 20 minutes).

Flip the potatoes and reduce the heat to 375º and continue cooking until the sweet potatoes are fork tender.
