Ina’s Basil Chicken Hash

I met Ina Garten of Barefoot Contessa during her cookbook signing in Manhattan a few weeks ago. As a star on the Food Network, Ina is just as friendly and inviting in person as she appears on her show. She has always been one of my culinary idols because of her casual style of cooking and her consistently delicious arsenal of recipes (I own all six of her cookbooks!). There’s nothing worse then a recipe that sounds and looks good in theory, but turns out a total mess … but have no fear, Ina’s Basil Chicken Hash is a guaranteed crowd pleaser. I’ve substituted sweet potatoes for regular potatoes, but other than that, the recipe is perfect as is.
