Mini Macaroons

It doesn’t get much easier than this. Four ingredients and a total of 10 minutes in the oven. This super fast dessert is the perfect tiny sweet ending to any meal. Mini macaroons are great plain, drizzled with semisweet chocolate or topped with chocolate and chopped pecans. Any way you make them, they’re addicting, and I guarantee you’ll be popping these pocket-sized treats all day and night.

Shopping List

  • 6 cups coconut flakes
  • 1 can (14 oz.) sweetened condensed milk
  • 2 teaspoons pure vanilla extract
  • 1 cup semisweet chocolate chips

Recipe

Makes 3½ dozen mini macaroons.

Preheat the oven to 350º.

Combine the coconut flakes, sweetened condensed milk and vanilla in a large bowl.

Use a small spoon to scoop out roughly 3 Tablespoons of the mixture and press it into a ball.

Place each of the small rounds on a baking sheet lined with parchment paper.

Bake for 8 to 10 minutes until the tops are golden brown.

Remove the baked macaroons from the oven and let cool completely.

Melt the chocolate chips in a saucepan then drizzle the chocolate over the cooled macaroons with a fork.
